Recuento y caracterización de hongos en yerba mate compuesta con hierbas aromáticas

In Paraguay there are no official data on national-level research, concerning the content or the type of fungi present in yerba mate as herbs used for mixing.
The objective of this research was to quantify and characterize the fungal genera present in greater frequency in the final product and check with the parameters set by the standard. It was analyzed a total of 120 composite samples of yerba mate, five different brands taken from the shelves of shops downtown and the outskirts of Encarnacion city in Paraguay.
We recorded the moisture content of each sample to correlate with the content of fungi. Laboratory essays to determine the CFU and humidity were performed according to the technical specifications of the INTN 35002-01 s t andard (Na t i ona l I ns t i t u te of Normalization and Technology) for microbiological essays. The values obtained were processed with the statistical program Statgraphics plus.
The statistical results indicated minimum values of 1000 CFU / g, maximum of 47,000 CFU / g, an average of 11,027 CFU / g and a median of 6,000 CFU / g. 50% of the samples showed values below 10,000 CFU / g of moisture. The average result was 9.1%, being within permitted by norm.
